Thank you for looking. This is a Sugimoto Usuba knife for professional chefs and cooking/knife enthusiasts alike. I am also a chef, but I have moved away from Japanese cuisine and no longer have the opportunity to use it. This is a very fine Hon Kasumi piece.
I have kept it in storage, and since it is made of steel, I have maintained it with cream cleanser when rust appeared. On the Sugimoto website, the 24cm Hon Kasumi model is priced at 110,000 yen. This is an older model, and it seems the Sugimoto mark on the bottom is no longer present on current models.
