Using the revived Shirotama rice, a legendary rice cultivated in the Edo period in Satsuma and Hyuga, the heartland of shochu, as koji rice. Made using the Genji sweet potato, said to be the root of current sweet potato varieties, and brewed using traditional earthenware pot fermentation. It has a robust and satisfying body with a clean finish. This is an aged shochu of Samurai Mon slowly matured for over 3 years.
