? Beets

Nutrients found in beets include essential minerals like potassium and iron, as well as folate and betaine.
Potassium is well-known for its ability to lower blood pressure by excreting sodium, while iron is known for its role in supplying oxygen to the entire body. Folate is a vitamin involved in DNA synthesis and is particularly necessary for women during pregnancy and breastfeeding. Betaine is an amino acid that is not as commonly heard of but is related to healthy skin and hair.
Beets are particularly rich in polyphenols and nitrate ions.

? Malabar Spinach

Malabar spinach is a vegetable from the Basellaceae family, genus Basella, that is available in the summer. It is an annual plant native to Southeast Asia that grows by extending vines.
The green-stemmed variety of Malabar spinach is considered to have a better texture than the purple-stemmed variety and is the mainstream for consumption.
Not only the leaves and stems but also the buds, flowers, and fruits of Malabar spinach can all be eaten.
It has a unique slimy texture and is rich in vitamins such as B, C, and E, as well as folate, iron, calcium, magnesium, phosphorus, and carotene.
