Description
This is a Sujihiki (slicer) knife made from Yasuki steel, traditionally forged.
The blade length is approximately 20cm.
It is a single-bevel knife.
The steel is Aogami (Blue Steel) (marked with a blue stamp).
It is made of solid steel (Honyaki).
The handle is made of water buffalo horn.

The maker's mark is unknown, but it is stamped Yasuki Steel Hon-uchi-yaki on the flat side.
There is also a blue stamp, indicating it is likely solid Aogami steel.

The meaning of Yasuki Steel Hon-uchi-yaki is unclear, but it is likely referring to a solid steel, traditionally forged blade.
(There are other brands of Sujihiki solid steel, traditionally forged knives with similar stamps, but this maker may have chosen to call it Hon-uchi-yaki specifically. This is my personal opinion.)

Sujihiki knives can be either Gyuto-style or Boning-knife-style in shape. This knife appears to be the Boning-knife-style.

There were many rust spots, which have been repaired, but small rust spots (pitting) and scratches could not be completely removed.
We recommend it if you don't mind these imperfections.

This is a slender Sujihiki, but it has various uses and is popular, so it sells out quickly. Please consider purchasing it soon.

The flat and cutting edge are almost mirror-polished.
It is lightweight and generally in beautiful condition.

Its size makes it recommended for both professionals and general households.

The knife has been finished on a Kitayama 8000 grit whetstone, a Shapton 12000 grit whetstone, and a natural whetstone.
It is extremely sharp and ready for immediate use.
