● Organic fertilizer
● No chemical fertilizers
● No herbicides
Jerusalem artichokes will sprout and produce tubers even if left unattended, but we till the soil every year and carefully plant them evenly on mounds by hand.
We often hear that wild Jerusalem artichokes are bitter, but ours are praised for being very sweet and delicious even when eaten raw.
(Note: This may vary by individual.)
When we asked a veteran farmer with half a century of experience why, they said, Vegetables that are no longer tended by humans return to the wild. Aren't all wild things bitter? Burdock and bracken are the same, aren't they? ...Indeed!
