The raw material is the tongue skin that is left over when preparing the fresh beef tongue served in our restaurant. The amount we can produce at one time is limited, so please understand that immediate shipping may not be possible even after your purchase. Instead, we will send you freshly made jerky. The manufacturing date on the product seal in the photo is from the day the photo was taken, but we will send you jerky made just before shipping. Please rest assured.
